Roast Beef, Avocado & Marinated Onion Sandwich with Pesto Mayo
Sometimes you need a truly satisfying sandwich to get you through the day. Enter COLUMBUS® Roast Beef, combined with avocado, pesto mayonnaise, arugula, watercress and pickled red onions. Layered atop your favorite baguette, this sandwich will deliver on flavor and makes a great meal to share.

mayonnaise

demi baguette sliced lengthwise, toasted
- 1
avocado, peeled and thinly sliced
- 2
(6-ounce) packages COLUMBUS® Seasoned Roast Beef
- 1 cup
arugula
- 1/2 cups
watercress
Directions
In small bowl, combine pesto and mayonnaise; spread evenly over both halves of baguette.
Top each baguette half with avocado, roast beef, arugula, watercress and Marinated Onions.
Cut each half into 4 pieces.
Marinated Red Onions
