Grilled Prosciutto-Wrapped Chicken Breasts
Classic grilled chicken gets a serious upgrade when wrapped in COLUMBUS® Prosciutto. The lean and savory Prosciutto locks in the flavor of the chicken, while a lemon butter sauce finishes the dish with a timeless taste profile that appeals to everyone.
Ingredients

(5-ounce) boneless, skinless chicken breasts
- 1/2 teaspoons
kosher salt
- 1/2 teaspoons
ground pepper
- 6
slices COLUMBUS® Prosciutto
- 2 tablespoons
extra-virgin olive oil
- 1/3 cups
chicken broth
- 2 tablespoons
lemon juice
- 2 tablespoons
butter
- 2 tablespoons
chopped fresh flat-leaf parsley
- 1/4 teaspoons
crushed red pepper
Directions
Heat grill to medium-high heat.
On work surface, pound out chicken breasts to 1/2-inch thickness. Season with salt and pepper.
Wrap each chicken breast with 1 prosciutto slice.
Place wrapped chicken breasts on grill. Grill 6 to 8 minutes, turning once, until cooked through. Transfer to serving plate.
In skillet over medium-high heat combine broth and lemon juice. Bring to simmer. Cook 2 to 3 minutes or until reduced. Remove from heat. Stir in butter, parsley and crushed red pepper. Serve sauce over chicken.
